PENNE
& BEANS WITH SAFFRON
Food spiced with saffron has a distinctive
aroma, a bitter honey-like taste and a strong yellow color.
Serves 4
200 gm penne pasta, 1 tbsp butter, 125 gm
french beans cut into 11/2" long slanting pcs & boiled in salted water
till just done.
SAFFRON SAUCE
1 tbsp olive oil or any cooking oil, 1 tbsp
flour, 11/2 cups (250 ml) milk, 50 gm cheese, ¼ tsp saffron threads or a pinch of saffron
powder, 2 tbsp chopped fresh sage or ½ tsp dried sage (optional) or coriander leaves,
1tsp salt, or to taste, ¼ tsp pepper
- Cook pasta in boiling water in a large pan
as per base preparation directions. Keep aside.
- To make the sauce, heat oil in a small
saucepan over low heat, stir in flour and cook for 1 minute.
- Reduce heat and add milk, saffron and sage
or coriander. Cook, stirring, for 3-4 minutes or until sauce boils and thickens slightly
to coat the back of a spoon. Add salt and pepper. Keep sauce aside.
- At the time of serving , heat 1 tbsp butter.
Add beans and pasta and toss to heat. Transfer to a serving dish.
- Top with the saffron sauce and sprinkle lots
of cheese on it. Serve the meal immediately.
