PACKY PASTA RECIPES


PENNE ~ FETTA CHEESE IN TOMATO SAUCE

(have substituted paneer for feta cheese as it is readily available). Serves-2

1 tbsp olive oil or any cooking oil, 1 onion – finely chopped ; 2 garlic flakes – crushed, 250gm tomatoes – blanched, skinned & chopped, 1 cup penne or any other pasta ; ½ cup (50gm)- roughly mashed paneer, 1 tbsp chopped fresh basil or coriander ; ½ tsp sugar ; 1 tsp salt, ¼ cup grated cheese to sprinkle on top

  1. Heat oil. Add onion & garlic, cook until onions turn light brown. Add tomatoes, basil, salt and sugar, cook for 5 minutes, stirring occasionally. Keep sauce aside. Cook pasta base.
  2. At serving time, melt 1 tbsp butter in a non-stick pan and toss the pasta in it till it’s heated. Mix paneer with pasta. Toss. Remove from fire.
  3. Heat tomato sauce. Toss paneer – pasta mix in it. Transfer to a serving platter. Serve sprinkled with grated cheese.
