IN SPICY TOMATO SAUCE
Serves 4
4 cups boiled penne pasta, 2 tbsp butter, ½ tsp each salt, pepper and red chilli
powder
SAUCE
2 tbsp oil, 1 tsp oregano, 4-6 flakes
garlic crushed, 4 tbsp tomato puree, 2 tbsp tomato ketchup, ½ onion - finely
chopped, ½ capsicum - finely chopped, 4 tbsp fresh cream, 2 tsp chilli sauce, salt,
pepper to taste
- Heat butter in a frying pan. Add boiled
pasta and sauté for 1 minute.
- Add ¼ tsp each of salt, pepper and red
chilli powder. Mix well for ½ minute. Remove from pan.
- To prepare the sauce, heat oil in the same
pan. Add oregano and garlic.
- When garlic changes color, add tomato puree.
Stir for 1 minute.
- Add diced onions and capsicums. Stir for 1-2
minutes.
- Add tomato ketchup and chilli sauce. Mix.
- Add salt and pepper to taste.
- Add the pasta. Mix well. Remove from heat.
- Add the cream. Mix gently and serve.
