PASTA RECIPES


PASTA IN SPICY TOMATO SAUCE

Serves 4
4 cups boiled penne pasta, 2 tbsp butter, ½ tsp each – salt, pepper and red chilli powder

SAUCE

2 tbsp oil, 1 tsp oregano, 4-6 flakes garlic – crushed, 4 tbsp tomato puree, 2 tbsp tomato ketchup, ½ onion - finely chopped, ½ capsicum - finely chopped, 4 tbsp fresh cream, 2 tsp chilli sauce, salt, pepper to taste

  1. Heat butter in a frying pan. Add boiled pasta and sauté for 1 minute.
  2. Add ¼ tsp each of salt, pepper and red chilli powder. Mix well for ½ minute. Remove from pan.
  3. To prepare the sauce, heat oil in the same pan. Add oregano and garlic.
  4. When garlic changes color, add tomato puree. Stir for 1 minute.
  5. Add diced onions and capsicums. Stir for 1-2 minutes.
  6. Add tomato ketchup and chilli sauce. Mix.
  7. Add salt and pepper to taste.
  8. Add the pasta. Mix well. Remove from heat.
  9. Add the cream. Mix gently and serve.
