PACKY PASTA RECIPES


PASTA IN CLASSIC TOMATO SAUCE

serves 4

150 gm mushrooms – sliced thinly (11/2 cups), 2 tori (zucchini) – peeled, sliced thinly (1/2 cup), optional, 50 gm tomatoes – blanched & chopped, 4 tbsp tomato puree, 1 tbsp chopped fresh oregano or ½ tsp dried oregano, 3 tbsp olive oil or any other cooking oil, 1 tbsp butter, 2 onions chopped, 11/2 tsp salt, ½ tsp pepper, ½ tsp sugar, 125 gm flat spinach pasta or 2 cups any other pasta – boiled and tossed in 2 tbsp butter, 2 tbsp parmesan or any other cheese – grated,

  1. Heat oil in a kadhai, add onions, stir over moderate heat until soft.
  2. Add tomatoes, tomato puree, mushrooms, zucchini, oregano, salt, pepper and sugar. Boil, cover, reduce heat, simmer for 15 minutes or until sauce has reduced and thickened and the vegetables are cooked. Add ¼ cup water. Boil. Simmer for 2-3 minutes.
  3. At serving time, melt 1 tbsp butter on fire. Add pasta and toss well. Transfer to a serving dish, spoon hot sauce over pasta. Sprinkle cheese.
