PASTA RECIPES


MACARONI WITH VEGETABLES IN CREAMY CAPSICUM SAUCE

Serves 4
2 cups uncooked wheel macaroni or any other shape – boiled, 2 small carrots – peeled and cut into very thin round slices, 1 tori (zucchini) - peeled and cut into very thin round slices, ½ cup thick cream, 4 tbsp melted butter, 50 gm cheese – grated

CAPSICUM SAUCE

1 green capsicum, ½ onion, 3-4 flakes garlic, ½ tsp salt, ½ tsp black pepper, 2 tbsp olive oil

  1. To make sauce, heat oil. Reduce heat and add garlic, wait till it changes color. Add capsicum, onion, salt and pepper and cook till onions turn transparent. Remove from fire. Cool. Transfer in a mixer or blender and blend to a rough paste.
  2. Remove from mixer to a small pan.
  3. Heat butter. Add carrots, zucchini and stir-fry for 3-4 minutes on low heat, till the vegetables get cooked.
  4. Add pasta and toss to mix well. Add salt and pepper to taste. Keep warm in a serving dish.
  5. Heat the sauce on low heat. Stir in the cream. Remove from heat just before it boils.
  6. Pour over the vegetables and pasta mix. Transfer to a serving dish.
  7. Top with grated cheese. Serve hot.
