MACARONI IN MARINARA TOMATO SAUCE

Serves – 4
4 cups boiled macaroni, 2 tbsp butter, 4-5 tbsp grated cheese

MARINARA TOMATO SAUCE

2-tbsp olive oil or any cooking oil, 2 tej patta, 4-6 saboot kali mirch, 1 small onion – chopped, 1 tsp crushed garlic, 5 tomatoes (400 gm), salt to taste, ½ capsicum – cut into four pcs and deseeded, 3tbsp tomato puree, ¼ cup tomato ketchup, ½ tsp dried oregano

  1. Blanch the tomatoes in boiling water for 5-7 minutes. Remove from water and skin them.
  2. Cut into quarters and deseed the tomatoes.
  3. Chop finely and keep the tomato pulp aside.
  4. Heat oil, add the tej patta and peppercorns and sauté for a few seconds.
  5. Add the onion, garlic and capsicum and sauté for a few minutes.
  6. Add the tomato pulp and allow it to simmer for 10-15 minutes until the sauce reduces a little.
  7. Add the tomato puree, ketchup and salt and simmer for some more time.
  8. Finally, add the oregano and mix well.
  9. Remove the capsicum, tej patta and peppercorns and discard. Keep aside.
  10. Heat butter and toss the macaroni in it for a few seconds. Sprinkle some salt and pepper on the macaroni. Transfer to serving dish.
  11. Heat sauce and pour over the macaroni. Top with grated cheese.
