MACARONI
IN MARINARA TOMATO SAUCE
Serves 4
4 cups boiled macaroni, 2 tbsp butter, 4-5 tbsp grated cheese
MARINARA TOMATO SAUCE
2-tbsp olive oil or any cooking oil, 2 tej
patta, 4-6 saboot kali mirch, 1 small onion chopped, 1 tsp crushed garlic, 5
tomatoes (400 gm), salt to taste, ½ capsicum cut into four pcs and deseeded, 3tbsp
tomato puree, ¼ cup tomato ketchup, ½ tsp dried oregano
- Blanch the tomatoes in boiling water for 5-7
minutes. Remove from water and skin them.
- Cut into quarters and deseed the tomatoes.
- Chop finely and keep the tomato pulp aside.
- Heat oil, add the tej patta and peppercorns
and sauté for a few seconds.
- Add the onion, garlic and capsicum and
sauté for a few minutes.
- Add the tomato pulp and allow it to simmer
for 10-15 minutes until the sauce reduces a little.
- Add the tomato puree, ketchup and salt and
simmer for some more time.
- Finally, add the oregano and mix well.
- Remove the capsicum, tej patta and
peppercorns and discard. Keep aside.
- Heat butter and toss the macaroni in it for
a few seconds. Sprinkle some salt and pepper on the macaroni. Transfer to serving dish.
- Heat sauce and pour over the macaroni. Top
with grated cheese.
