PACKY PASTA RECIPES


FUSILI MUSHROOM ALFREDO

serves 4

2 cups uncooked fusilli pasta – boiled, 75 gm mushrooms – sliced thinly (1 cup), 5 tbsp butter, 4 flakes garlic – crushed, 2 tbsp maida, 1 tbsp chopped parsley or coriander, 11/2 cups milk, 100 gm (1cup grated) mozzarella cheese, salt to taste, a few black peppercorns – roughly powdered

  1. Melt 4-tbsp butter. Add sliced mushrooms and sauté for 4-5 minutes. Reduce heat. Add garlic. Stir for a few seconds.
  2. Add flour. Cook on low heat for 1 minute. Add parsley or coriander.
  3. Add milk, mix well to dissolve the flour. See that there are no lumps. Return to heat. Boil. Cook for 2 minutes, till it starts coating the spoon. Remove from heat. Add ˝ cup cheese. Add salt to taste.
  4. Heat 1 tbsp butter in a large non-stick pan or kadhai and toss the pasta in it till it gets heated. Add ˝ tsp salt, or to taste. Spread warm pasta on a plate. Pour sauce. Sprinkle remaining cheese & peppercorns. Serve with garlic bread.
